We're mindful about our waste and do what we can to minimize it. All kitchen and dining room food scraps are fed to the pigs at Rebop Farm in Brattleboro, Vermont. All glass, cardboard, metal, plastic, and paper is recycled. These efforts result in our producing minimal waste for each night of service.
